Roasted Garlic Mashed Turnips & Potatoes

Replacing some of the potatoes with turnips gives this mash a slightly sweet flavor that pairs well with sharp Parmesan. You can also substitute goat cheese, blue cheese, or Cheddar.

Ingredients
  

  • 1 head Garlic
  • 1 tsp Olive oil
  • 2 lbs Red Potatoes (cut into wedges)
  • 1 lb Turnips (peeled and cut into chunks)
  • 1/2 cup 2% milk
  • 1/2 cup Grated Parmesan cheese
  • 1 tbsp Chopped Thyme
  • 1 tbsp Chopped Chives
  • 2 tbsp Butter
  • 1/2 tsp Salt
  • 1/2 tsp Ground pepper

Instructions
 

  • Preheat oven to 375 degrees F.
  • Rub off the excess papery skin from garlic without separating the cloves. Slice the tip off the head, exposing the ends of the cloves. Place the garlic on a piece of foil, drizzle with oil, and wrap into a package. Roast until the garlic is golden brown and soft, about 45 minutes. When cool enough to handle, squeeze the cloves and any oil left in the foil into a small bowl.
  • Meanwhile, combine potatoes and turnips in a large pot and add enough cold water to cover. Bring to a boil over medium-high heat. Reduce heat to medium-low, cover, and cook until tender, about 20 minutes. Drain.
  • Return the potatoes and turnips to the pan and place over medium-low heat. Add the roasted garlic and mash with a potato masher to desired consistency. Stir in milk, Parmesan, thyme, chives, butter, salt, and pepper.

Chopped Kale Salad with Pecans, Cranberries & Herb Dressing

This salad is filled with kale, pecans, sweet cranberries, and an herb dressing that is to die for! And this dressing is ridiculous. It’s packed with bold flavors like onion, garlic, cayenne, and apple cider vinegar.

Ingredients
  

Herb Dressing

  • 1/4 Yellow onion
  • 1 Garlic clove
  • 3 tbsp Apple cider vinegar
  • 2 tbsp Lemon Juice
  • Handful Fresh herbs (mostly parsley, basil, and a little thyme and mint)
  • 1/4 cup Olive oil
  • 1/4 tsp Cayenne
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Salad

  • 4-5 cups Chopped kale (about 1 large bunch, stems removed)
  • 1/2 cup Toasted pecans(roughly chopped)
  • 2 tbsp Toasted pine nuts
  • 2 tbsp Dried cranberries

Instructions
 

  • In a large bowl add the chopped kale, pecans, pine nuts, and cranberries. Set aside.
  • In a blender add the onion, garlic, apple cider vinegar, lemon juice, herbs, olive oil, cayenne, salt, and pepper. Blend until smooth. Pour over salad, just enough to coat. Store any remaining dressing in the fridge.

Ingredients
  

  • 1/2 Onion
  • 1 pack Andouille Sausage (4 count)
  • 5 Small Golden Beets
  • 2 cups Kale
  • 1/2 cup Golden Raisins
  • 6 Shishito Peppers
  • 1-2 cups Chicken Broth
  • 2 tbsp Olive Oil

Instructions
 

  • Prep Vegetables. Dice onion. Chop kale.
  • Heat oil in a skillet at medium-high heat for 1-2 minutes.
  • Cut up sausage into 1-inch slices.
  • Saute sausage and onions in olive oil until browned.
  • Add shishito peppers, golden beets and golden raisins. Cook to your preference.
  • Add half a cup of chicken broth for flavor and to keep things from drying out.
  • Add chopped kale. Toss well while cooking on low heat. Salt and pepper to taste.

  • 1 lb Fresh Green Beans
  • 2 tbsp Avocado Oil
  • 3/4 tbsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1 tbsp Minced Garlic
  • 1/2 tbsp Cayenne Pepper
  • 1/2 cup Water

Instructions
 

  • Prep your green beans by rinsing them off and snapping off ends.
  • Add the green beans, garlic, cayenne pepper, salt and pepper. Mix well.
  • Cook green beans, stirring often, for 3-5 minutes or until they start to soften.
  • Pour in water and cover with lid for 1-2 minutes. Serve immediately.
